Roasted Balsamic Potatoes
- 1/2 cup Olive Oil
- 4 crushed Garlic Cloves
- 1 1/2 teaspoon dried Rosemary
- 2 1/2 lbs. Small potatoes or large potatoes cut into 1 inch chunks (skins on)
- 1 teaspoon Salt
- 2 tablespoons
Arbor Hill Three Oak Balsamic Vinegar
- 1/4 teaspoon ground Black Pepper
In a small saucepan over low heat cook the oil and garlic until the garlic begins to color. Remove from heat and add rosemary. Cover for 30 minutes. Preheat oven to 400 degrees F. Strain the oil into a roasting pan large enough to hold the potatoes in one layer. Add potatoes, salt & pepper, toss well to coat potatoes. Bake in top one-third of oven, turn and recoat potatoes occasionally until potatoes are crisp and tender, about 50 minutes. Sprinkle with
Arbor Hill Three Oak Balsamic Vinegar, recoat and bake 5 minutes longer. Serve. Truly delicious!
