Arbor Hill Wine Sausage and Tortellini Soup
- 1 lb. Arbor Hill's Sherried Wine Sausage,
sliced
- 1 cup Chopped Onion
- 2 large Garlic Cloves, sliced
- 5 cups Beef Stock or Canned Broth
- 2 cups chopped Tomatoes, (about 3/4 lb.)
- 1 8oz. can Tomato Sauce
- 3 large Carrots, thinly sliced
- 1 medium size Green Pepper, diced
- 1/2 cup
Arbor Hill's Noir Wine
- 2 tablespoons Dried Basil
- 2 tablespoons Dried Oregano
- Salt & Pepper to taste
- 1 can Cannellini Beans
- 8-10 oz. purchases fresh Tortellini
- Freshly grated Parmesan Cheese
Sauté Arbor Hill's Sherried Wine Sausage
onion and garlic, about 5 minutes. Put the mixture in a large Soup Pot and add stock, Tomatoes, Tomato Sauce, Carrots, Bell Pepper,
Arbor Hill's Noir Wine, Basil and Oregano. Simmer until vegetables are tender, about 40 minutes. (Can be prepared 2 days ahead. Cover and refrigerate. Bring to simmer before continuing). Add tortellini and beans to soup and cook until tender, about 8 minutes. Season soup to taste with salt and pepper. Ladle soup into bowls. Sprinkle with Parmesan and serve.
